- These bottles are a little difficult to close and open at first, probably because the seals are brand new. Close them up tight and leave them alone for a while, and they break in nicely.I’ve been using these for bottling kombucha for second fermentation, and they work wonderfully. They do trap a ton of gas, though, so “burping” them during the second ferment process can be a little frightening. I’ve had more than a few cases where I’ve sprayed my kitchen with kombucha while burping these bottles, so be careful if you’re bottling something that is going to be producing carbonation.
